유제품에 이용되는 주요 열처리 조건

Abstract

Heat treatment is a fundamental processing technology in the dairy industry. The main purpose of heat treatment is to destroy pathogenic and spoilage promoting microorganisms to ensure milk safety and shelf life. Despite the development of alternative technologies, such as high-pressure processing and pulse field technology for microbial destruction, heat treatment is widely used in the dairy industry and in other food processes to destroy microorganisms. Heat treatment has contributed greatly to the success of food preservation since Pasteur’s early discovery that heat treatment of wine and beer could prevent their deterioration, and since the introduction of milk pasteurization in the 1890s. In Korea, food labeling standards do not stratify heat treatments into low temperature, high temperature, and ultra-high temperature methods. Most milk is produced in Korea by pasteurization, with extended shelf life (ESL : 125––140°C / 1–10 s). Classification based on temperature (i.e. low, high, and ultra-high), is meaningless.

서 론

우리나라 식품공전에는 ‘유가공품은 63℃–65℃에서 30분간, 72℃–75℃에서 15초 이상 또는 이와 동등 이상의 효력을 가지는 방법으로 살균하여야 하며, 다만, 2℃ 이상에서 60일 이상 숙성하는 치즈 용 원유 및 유가공품은 위에서 정한 온도 등 살균 조건을 적용하지 아니할 수 있다’고 명시되어 있다. 단서 조항이 있지만 60일 이상 숙성을 한 경우에만 비살균 원유를 사용하여 자연치즈 제조가 가능하다[1]. 따라서, 국내에서 유통되는 대부분의 유가공품에는 원유(raw milk)의 살균 공정이 필수적이므 로 열처리 공정은 유가공 산업에서 가장 중요하고 보편적으로 사용되는 가공 기술이라고 할 수 있다.

원유 열처리의 주요 목적은 우유 및 유제품이 안전하고 적절한 상미기한을 갖도록 병원성 세균과 부패성 미생물을 제어함에 있다. 열처리 기술은 Pasteur가 와인과 맥주에 사용되어 변패를 억제할 수 있음을 보여준 이후 많은 식품으로 응용범위를 넓혀 나갔다. 1890년대 유럽과 미국에서 우유의 살균법이 도입된 이후, 우유의 열처리 가공기술은 지속적으로 발전하여 유제품 시장이 급속하게 성장 할 수 있는 견인차 역할을 수행했다고 해도 과언이 아닐 것이다. 열처리 기술 이외에도 고압 가공, 펄스 전기장 기술 등 비열 살균기술이 개발되었지만, 유가공 산업을 포함한 식품산업에서는 열처리를 이용한 살균 방법이 널리 사용되고 있다.

많은 나라에서 우유 살균에 대한 의무화가 정착되면서 열처리 방법에 대한 연구가 수행되었으며, 열처리 기술에 관한 많은 문헌이 발간되었다. 특히 IDF(International Dairy Federation, 국제낙농연맹)의 후원으로 우유의 열처리에 관한 책과 논문들이 과거부터 최근까지 지속적으로 출간되었는데, IDF에서 발간한 자료 중에 이번에 소개할 내용은 2018년에 발간한 ‘Heat treatment of milk: Overview’에 관한 것이다[1]. 이 자료(IDF Factsheet001/2018-02)에는 우리가 지금까지 단순하게 3가지로 분류하였던 열처리 조건을 비롯하여 보다 자세한 열처리 온도와 시간에 대한 정보를 수록하고 있다.

과거 1990년대 초까지 파스퇴르유업이 ‘저온살균 우유가 좋으냐, 고온살균 우유가 좋으냐’를 놓고 유가공업체·소비자보호원·언론사 등과 법정공방까지 벌였던 시절이 있었다. 시유(market milk) 생산을 위한 살균 조건은 유가공 기계 설비의 발달로 많은 변화가 있었는데, 지금 생각해 보면 당시의 열처리 방법에 따른 논쟁은 큰 의미가 없는 것이었다.

본 논문에서는 IDF 발간 자료를 토대로 유제품 종류에 따른 열처리 온도와 시간에 대한 내용을 기술하여 우유의 열처리 조건에 대한 올바른 정보를 제공하고자 하였다.

본론

1. IDF와 낙농진흥회

우유의 열처리에 관한 내용에 앞서 이해를 돕기 위하여 IDF와 IDF Korea의 역할에 대하여 간략하게 소개를 하고자 한다(보다 자세한 정보는 홈페이지를 참조). IDF는 우유 및 유제품의 국제 기준과 규격을 제정하기 위하여 1903년 설립된 국제민간단체로 2019년 12월 현재 우리나라를 포함하여 총 43개국이 회원국으로 참여하고 있으며, 회원국 원유생산량이 세계 우유 생산량의 75%를 차지하고 있다. 과거 100여년 전부터 낙농기술에 관한 많은 기준규격서, 연구논문, 학술도서 등이 출판되었는데, 이 중 많은 책들은 IDF의 후원으로 탄생한 것이었다. 또한 IDF는 1963년 UN식량농업기구와 WHO(세계보건기구)가 연합하여 만든 CODEX(국제식품위원회)의 설립에 중요한 촉매역할을 하였다(Fig. 1).

낙농진흥회(https://www.dairy.or.kr; 회장 이창범)는 원유와 유제품의 수급조절, 가격안정, 유통구조 개선 및 품질향상 등을 통하여 국내 낙농 및 관련산업에 기여하고자 1997년 9월 낙농진흥법에 의거하여 설립되었다. 낙농진흥회의 설립 이전에도 농림부의 낙농심의위원회에서 유사한 업무를 수행하였으며, 낙농심의위원회에는 학계에서 한국유가공연구회(후에 한국유가공기술과학회, 한국유가공학회, 한국낙농식품응용생물학회로 순차적으로 명칭이 변경되었음)와 산업계에서는 한국유가공협회가 적극적으로 참여하였다.

한국의 경우, 유가공 및 낙농을 국제적으로 대변할 수 있는 관련 기관이 없어 그동안 IDF 회원국으로 참여를 못하고 있었는데, 낙농진흥회 설립 이후 2006년 IDF에 준회원으로 가입하여 2010년 38번째 정회원 국가가 되었다. 이와 동시에 낙농진흥회 산하 IDF 업무담당 조직을 구성하여 IDF 회원국으로 국제적 활동을 하면서 2018년 IDF World Dairy Summit을 성공적으로 개최한 바 있다. 현재 IDF Korea는 낙농진흥회에서 운영을 담당하고 있으며, 한국유가공협회와 낙농식품응용생물학회를 포함한 관련 학회 전문가들이 참여하고 있다. 우리나라는 IDF 회원국으로서 IDF가 발간하는 모든 문서와 최신 자료를 제공받고 있으며, 우유 및 유제품에 대한 우리나라의 의견을 IDF-Korea를 통하여 제시할 수 있다.

2. 우유의 가열 살균

원유에는 다양한 미생물이 존재할 수 있으므로 원유의 열처리 공정은 필수적이다. 열처리 온도와 시간은 원유 중에 존재하는 미생물은 물론 우유에 함유된 영양 성분에도 영향을 준다. 우선적으로 고려할 사항은 위생학적 안전성이지만 열처리 조건에 따라 발생하는 우유 영양성분의 손실 및 생물학적 활성 감소 또한 고려해야 한다. 원유에 존재하는 특정 미생물의 균수가 감소할 정도의 온도와 시간 동안 열이 가해지면 열처리로 생각할 수 있기 때문에 열처리는 다양한 시간과 온도의 조합이 가능하다.

국내에서는 우유의 열처리 온도와 시간을 저온장시간(low temperature long time, LTLT), 고온단시간(high temperature short time, HTST) 및 초고온(ultra high temperature, UHT)로 구분하는 것이 일반적이지만, 우유 살균장치 및 포장 공정의 발달과 유제품의 안전성에 대한 소비자의 관심 증대로 실제 유가공 공장에서는 보다 효과적인 열처리 조건으로 수행하고 있다.

국내 식품공전에 제시한 온도와 시간은 하나의 예시에 불과하며, 품질 규격에 적절한 효력을 가진 열처리를 명시하고 있으나, 유가공 공장에서는 제품의 종류, 유통기한, 생산 공장의 여건 등에 따라 다양한 살균 조건이 존재하기 때문에 이를 유가공을 공부하는 후속 세대에게 주지시킬 필요가 있다.

열처리 시간과 온도 사이의 관계는 일반적으로 ln(시간)과 온도 사이의 선형 관계에 기초한 Arhenius 모형을 사용하여 아래와 같이 계산한다[2]. 물론 이 모형을 사용하여 계산된 조건을 기반으로 미생물의 사멸 속도와 우유 내 존재하는 영양소의 파괴 속도를 과학적으로 적용하여 각 유가공공장에서는 적절한 조건을 정립한다.

여기서 t, 유지시간(holding time, seconds); T, 절대온도(K).

그러나 72℃ 이상의 시간 온도 조합의 경우, 케슬러(Kessler) 방정식을 적용하는 것이 타당하며[3], 미국 FDA에서는 89℃ 이상의 열처리 시 각 열처리 온도별 유지시간에 대한 조합에 대한 지침을 마련하여, 이를 ‘higher-heat, shorter-time’ 살균으로 구분하였다[4].

3. 열처리 방법의 분류

우리는 지금까지 열처리 방법을 저온살균, 고온살균, 초고온살균과 같이 온도에 따라 구분하였지만, IDF 자료에서는 유제품의 종류별로 온도와 시간 조건을 보다 구체적으로 제안하고 있다. 사실, 열처리의 주된 목적이 원유 또는 유제품에 함유되어 있는 미생물을 파괴하는 것이므로 현재 유가공 공장에서 사용 중인 방법은 모두 살균 방법에 해당한다고 할 수 있다.

Table 12에 나타난 바와 같이 시유의 경우에 원유에 존재하는 미생물을 사멸시키는 정도에 따라 열처리 방법을 저온단시간살균(thermization), 살균(pasteurization), 유통기한 연장을 위한 살균(pasteurization-ESL), 초고온(UHT) 살균 공정으로 구분하였고, UHT 공정은 멸균유에 국한시켰다. 현재 국내 시유에 사용되는 살균 조건은 125℃–140℃ 1–10초에 해당되지만, 대부분 ESL 설비로 시유를 생산하므로 IDF에서 구분한 ‘유통기한 연장을 위한 살균’에 해당된다고 볼 수 있다.

과거에 저온 살균이라고 이야기했던 열처리 조건은 저온단시간살균(thermization) 조건에 해당된다. 저온단시간살균은 주로 우유의 상미 기간을 증진시킬 목적으로 사용하는 예열 과정에 사용하거나, 일부 치즈 제조시 살균과정에서 일어나는 단백질 변성에 의한 렌넷 응유 과정의 지연을 억제하고, 숙성기간 중 풍미 향상을 위하여 사용된다.

시유 생산에 전세계적으로 가장 많이 사용되는 열처리 방법은 살균과 유통기한 연장을 위한 살균 공정이며, 상온에서 유통되는 멸균 포장 우유의 경우에는 UHT 공정(135℃–150℃, 1–10초)과 용기내(in-container) 멸균(110℃–120℃, 10–20분; 또는 125℃, 5분) 공정이 사용된다(Table 2). 물론, 열처리 온도와 시간만을 기준으로 하면 살균과 유통기한 연장을 위한 살균 두 공정 조건에 모두 포함되는 경우도 있을 수 있으나, 열처리 온도와 시간만이 아닌 원유 전처리 및 포장 공정을 포함한 전체 공정을 살펴보고, 구분하는 것이 바람직하다.

농축유(condensed milk) 제품은 용기내(in-container) 멸균 방법을 사용하며, 요구르트 제조에 사용되는 원유 살균은 90°–95°에서 5–10분 살균 방법을 제시하고 있다. 분유의 경우, 열처리 정도에 따라 low-heat, medium heat, high-heat 등으로 각각 구분하여 여기에 적절한 열처리 조건을 제안하였다(Table 3).

탈지분유의 열처리 정도는 유청단백질 질소계수(whey protein nitrogen index, WPNI), 또는 유청단백질 변성계수(whey protein denaturation index)로 알려진 계수로 크게 3가지로 구분할 수 있는데, 탈지분유 g당 변성되지 않고 남아 있는 유청단백질의 질소 함량 비율로 나타낸다. Low-heat 탈지분유의 경우에는 72℃–80℃에서 15–30초의 열처리 조건을 사용하며, Medium-heat 탈지분유와 전지분유의 경우에는 85℃ 6초, 90℃ 30초 및 105℃ 30초 등의 열처리 조건이 사용된다. High-heat 탈지분유는 95℃ 5분, 120℃ 1분, 135℃ 30초 등의 열처리 조건이 사용되고 있다(Table 3).

결 론

Pasterurization은 살균을 의미하는 단어로 저온살균만을 의미하지는 않으며, 국내 유가공품 표시기준에도 저온, 고온, 초고온 살균제품으로 구분하지도 않는다. 유제품 제조시 원유의 열처리는 필수적인 공정으로 다양한 열처리 온도와 유지시간(가열시간)의 조합이 있으며, 이는 유제품의 종류에 따라 권장된 조건으로 수행한다. 특히, 수분활성도가 낮거나 다른 식품첨가물이 유제품에 첨가되는 경우에도 열처리 온도와 시간은 유가공 공장 특성에 맞도록 다른 열처리 조건으로 수행한다.

끝으로, 국내에서 판매되는 시유의 대부분은 유통기한 연장을 위한 살균 공정을 사용하고, 일부 제품만이 살균 공정으로 생산되기 때문에, 열처리 온도의 상대적 개념인 저온, 고온, 초고온으로의 구분으로 시유를 평가하는 것은 의미가 없으며, 어떠한 방법으로 원유를 살균하여도 우유의 가치가 크게 달라지지 않는다는 점을 강조하고 싶다.
